INSTRUCTIONS
STEP 1: SANITIZING
Follow the steps outlined in your Mr. Beer Kit Instructions. (You can find a copy of these instructions to download by visiting our help desk.)
NOTE: BE SURE TO SANITIZE EVERYTHING THAT WILL COME INTO CONTACT WITH YOUR BEER.
STEP 2: BREWING
Brewing beer is the process of combining a starch source (in this case, a malt brewing extract) with yeast. Once combined, the yeast eats the sugars in the malt, producing alcohol and carbon dioxide (CO2). This process is called fermentation.
1. Remove the yeast packet from under the lid of the can of Brewing Extract, then place the unopened can in hot tap water.
2. Place the pellet hops into the hop sack tying it closed, then trim away excess material.
3. Using the measuring cup, pour 4 cups of water into your clean 3-quart or larger pot, then SLOWLY sprinkle in the pouch of Booster™ and stir until dissolved. Bring mixture to a boil, add in honey, ginger and hop sack, then remove from heat.
4. Open the can of Brewing Extract and pour it into the mixture. Stir until thoroughly mixed. This mixture of unfermented beer is called wort.
5. Fill keg with cold tap water to the 4-quart mark on the back.
6. Pour the wort into the keg, and then bring the volume of the keg to the 8.5-quart mark by adding more cold water. Stir vigorously with the spoon or whisk.
7. Sprinkle the yeast packet into the keg, and screw on the lid. Do not stir.
8. Put your keg in a location with a consistent temperature between 68°and 76° F (20°-25° C) and out of direct sunlight. Ferment for 14 days.
9. After approximately 24 hours, you will be able to see the fermentation process happening by shining a flashlight into the keg. You'll see the yeast in action in the wort. The liquid will be opaque and milky, you will see bubbles rising in the liquid, and there will be bubbles on the surface.
Your fermentation will usually reach its peak in 2 to 5 days (this is also known as “high krausen”). You may see a layer of foam on top of the wort, and sediment will accumulate at the bottom of the fermenter. This is totally normal. Complete fermentation will take approximately 2 weeks.
After high krausen the foam and activity will subside and your batch will appear to be dormant. Your beer is still fermenting. The yeast is still at work slowly finishing the fermentation process.
STEP 3: BOTTLING AND CARBONATING
Follow the steps outlined in your Mr. Beer Kit Instructions. (You can find a copy of these instructions to download by visiting our help desk.)
REVIEWS
Best beer I've made yet.

*****
First and foremost, this beer is not for anyone who doesn't love IPA. Those who dislike or tolerate IPAs will hate this beer. The description is no joke, it's incredibly hoppy, and that bitterness definitely lingers after you drink. I don't know how to describe the finish other than clean and bitter. The beer is incredibly dark, almost looks black in the glass. Hold it up to light and you get a beautiful amber color. It smells floral and sweet. The beer tastes like an excellent IPA. I don't know how else to describe it. It's a sincerely delicious IPA. Even better than some popular craft beers, the finish is just so clean with a wonderful bitterness. I fermented for 3 weeks before bottling. A friend of mine runs a microbrewery and suggested I try it after 2 weeks in bottles, well before Mr. Beer suggests. I'm going to keep a bottle or two for a couple of months just to see the difference, but there's no way I'm waiting on the rest of the beer. It's ready now and perfect. The ABV is no joke. I fermented for 3 weeks and this has an estimated ABV of 11% on the nose. And it feels like it. I'm 3/4 way through a 12 oz bottle and by the amount of rambling I've done in this review you should understand how strong it is. It's one of the most pricey beers Mr. Beer offers, and I can say after 3 years of brewing Mr. Beer products, this is the best beer I've ever made. If you or your friends are IPA lovers, spend a little extra cash and make something that's going to knock their socks off. But make no mistake, anti-hops individuals will despise it.
Refreshing

Brew it for my wife and we both like it. My opinion the Hops pellets do the perfect combination with the honey. At my wifes request I eliminated the ginger from the recipe and the beer taste was perfect. Will brew again.
Not a bad brew

This isn't my type of beer but I brewed it because my wife was interested in trying it. Everything went well, fermented in the LBK for three weeks and conditioned in the bottle for four weeks before drinking. From a taste standpoint, wife likens it. Not the type of beer I like. But since the wife likes it, I will brew this one again.
Change is good!

This was my first home brewing experience, so please keep that in mind... After reading the reviews on the forum I was concerned about the concentrations of honey and ginger in the beer. I opted for half the honey and half the ginger and ended up with what I would consider both tasty and refreshing. The beer is light, a beautiful golden color, and very refreshing. There was a hint of Ginger, and it was not overly sweet, just enough of both to accentuate the beer without masking it. I will make this again!
